Growing up Country


Scalded Lettuce

I would take the aluminum dishpan up to the lettuce bed there beside the grape arbor, down and out from the shed door. The lettuce was sewn thick in about a 4x10 (maybe!) bed. I would pull up plants or pinch off leaves until I had a pan full.

Now I will have to guess: I think Aunt Merica put vinegar, bacon fat and sour (maybe just cream) into a skillet. Once it was boiling the lettuce went in, got turned until the leaves were wilted and then served.
