A Variety of Salad Dressings

The basic mountain dressing for raw green salad, whether alone or mixed, is fried bacon, cut fine, then add vinegar, pinch of salt, pinch of sugar. Pour hot bacon mixture over greens. To slightly wilt greens, the hot iron skillet is turned over the bowl of greens. Any combination of greens to suit the taste may be used.

Hot Salad Dressing

Fry three slices of diced bacon. Add three tablespoons of vinegar, one tablespoon of sour cream, and one teaspoon of flour stirred into a paste with water. The addition of a half teaspoon of salt, pepper and the yolk of an egg mixed in creates a tasty dressing for many salads.

Hot Salad Dressing

1 Tablespoon goose, chicken, bacon fat or butter
1 tsp flour
2 tsp sugar
1/2 tsp dry mustard
1/8 tsp pepper
1/2 tsp salt
1/2 c vinegar
yolk of 1 egg

Melt the shortening and blend in the flour. Add the vinegar and stir until mixture thickens. Mix together the sugar, mustard, salt and papper and add to the liquid. Cook for 4 minutes. Pour over the beaten egg yolk and mix well. return to fire and cook 1 minute longer.
