Poke shoots 4 to 6 inches tall

Lamb's Quarter (Wild spinach)
Narrow Dock
One Rhubarb leaf
Sometimes a bit of dandelion
Upland cress

Parboil in a lot of water for 10 to 15 minutes. Drain.
Return to pot. Add a small amount of water, salt, and quite a lot of butter or bacon grease. Sauté until very tender, a half-hour or more.

Pass vinegar.
