
Dumplings
Have ready boiling chicken stock in a large pot.
Sift flour into a bowl and make well in middle.
Pour a cup or two of the boiling stock into the flour.
Add some salt.
Mix into a ball in the middle of the flour.
Transfer to a floured board.
Roll fairly thin. Cut into strips
Drop into boiling stock.
Cover and cook 10 - 15 min.
Don't let it boil or stick.
Note:
If you want to get the right flavor for these dumplings, you have
to find the very best quality chicken because everything depends
upon the flavor of the broth.
We
grandchildren loved this dish and we only got it in Rural Retreat.
The dumplings were made in a wooden bowl, rolled out on a wooden
board and served in a white, square fluted china serving dish
that was never used for anything else.
